Roasted Spiced Carrots 2

Roasted Spiced Carrots Ingredients: 2 lbs carrots, cut diagonally into 2 inch pieces 3 T Olive Oil 2 T butter 3-4 T roasted salted pistachios-chopped 1/2 tsp each of salt, ground coriander, black pepper 1/4 tsp each of chili powder, paprika 1/8 tsp each of ground ginger, cinnamon Dash of ground cloves and cayenne pepper Directions: Pre Heat oven to 400 degrees. Coat a jelly roll pan with olive oil Toss Carrots and olive oil in bowl Mix spices  together and toss over carrots Arrange and spread out carrots on jelly roll pan Roast in oven for about 40 min. Transfer on to a serving dish. Melt 2 T of butter and drizzle over carrots.  Sprinkle chopped pistachios on top. Serve! I took this to a family Easter Dinner about 50 minutes from my house. Chocolate, Raspberry Delight Recipe This is another “Eat Your Smoothie” Recipe. Ingredients: Siggs Raspberry Greek Yogurt – 1 Container 1 scoop Shaklee 180 Chocolate Smoothee Mix 1 TBS Milk (Cashew, Rice, Almond…whichever is your favorite) Several Frozen Red Raspberries 6 Chopped Pecans Directions: Mix Yogurt, Smoothee Mix and Milk in bowl. Sprinkle Frozen Raspberries and Pecans on top. Optional: You can add a drop or two of chocolate Stevia for a richer, chocolate flavor. Calories: 250 Protein: 23 grams Great for a breakfast or light lunch! Add a salad for more of a meal.

Sometimes I “eat” my smoothie instead of drink it. Especially if I am having it for lunch like I did today after church. This is my favorite but you can mix up the yogurt flavor, fruit, lime instead of lemon etc. to make it custom to your tastes. 1 container of Siggs Coconut yogurt 1 scoop of Shaklee 180 Vanilla Smoothee Protein mix Generous squeeze of fresh lemon Mix that together Top with several blueberries and granola with sliced almonds This is so good! With Siggs yogurt about 13 grams of protein and 1 scoop of Shaklee 180 protein at 8 grams of protein, this is a great option as main course for any meal! Enjoy! Healthy Chicken Stir Fry Ingredients: 2 Chicken Breasts-cubed Mix of green, red, yellow or orange peppers Fresh mushrooms Onion Coconut Oil Sesame Seed Oil(optional) Basmati Rice-cook according to directions on package Directions: Place 1-2 tsp coconut oil in pain, cook cubed chicken until done, set aside, keeping warm Cut up veggies, Saute in pan Add Chicken back to pan and put 1 Tbs Sesame oil in pan (optional) Place Chicken and veggie stir fry over already cooked Basmati Rice Serve Hot! Great heated up the next day too….IF you have left overs!

Italian Chicken Salad Recipe Ingredients: Baby Spinach Chicken Breast Italian dressing Feta Cheese crumbles Black olives Roasted red peppers Onion Cherry tomatoes Avocado Pecans I took some chicken that I cooked the night before in a jar of Roasted red peppers and garlic. Diced it up and placed in bowl with all the other ingredients listed. I only used about 1 T of Italian dressing. This made a great supper and very filling. I went very light on the feta and pecans. It’s delicious and a great way to use leftover chicken! Let me know how you like it or if you did any other variations.
