Healthy Chicken Stir Fry Ingredients: 2 Chicken Breasts-cubed Mix of green, red, yellow or orange peppers Fresh mushrooms Onion Coconut Oil Sesame Seed Oil(optional) Basmati Rice-cook according to directions on package Directions: Place 1-2 tsp coconut oil in pain, cook cubed chicken until done, set aside, keeping warm Cut up veggies, Saute in pan Add Chicken back to pan and put 1 Tbs Sesame oil in pan (optional) Place Chicken and veggie stir fry over already cooked Basmati Rice Serve Hot! Great heated up the next day too….IF you have left overs!
Veggie Eggs Sauté orange peppers, spinach and tomatoes in 1 tsp coconut oil, set aside. Scramble 2 large eggs. Put veggies back in pan to warm up again. Place on plate and put several crumbles of feta cheese on it. Enjoy!
Italian Chicken Salad Recipe Ingredients: Baby Spinach Chicken Breast Italian dressing Feta Cheese crumbles Black olives Roasted red peppers Onion Cherry tomatoes Avocado Pecans I took some chicken that I cooked the night before in a jar of Roasted red peppers and garlic. Diced it up and placed in bowl with all the other ingredients listed. I only used about 1 T of Italian dressing. This made a great supper and very filling. I went very light on the feta and pecans. It’s delicious and a great way to use leftover chicken! Let me know how you like it or if you did any other variations.
This is my absolute favorite Smoothie recipe. I don’t have a catchy name for it so if you want to throw out some suggestions, I’d love it! 8oz Almond Coconut Milk, unsweetened 1/2 Banana 1 tsp Natural Peanut Butter (OR 1 T. PB2) 4-5 Ice Cubes. 2 scoops Shaklee 180 Protein Vanilla Smoothee mix Put first 4 ingredients in the blender…after smooth, add in the 180 Protein Smoothie mix until well blended. Makes one serving
We had a Christmas brunch this year. I made these delicious healthy appetizers. Salmon Dill Cucumber Appetizers Ingredients: English Cucumbers Whipped Cream Cheese Fresh Dill Smoked Salmon Directions: Peel skin from cucumbers, cut into slices. Spoon layer of cream cheese on cucumbers. Place pieces of fresh dill on top of cream cheese. Cut salmon into squares and place on top. I used little cocktail toothpicks for easy serving. I also placed on a chilled plate and kept in fridge until time to serve. Enjoy. Let me know what you think!
I love summer because we eat so many fresh veggies from our garden! It seems like we always have tons of zucchini. In the past I have always made lots of bread with it…since I have gone gluten free this past year I had to come up with other recipes to keep up with my over abundance of this awesome green veggie! Cultured Vegetable Recipe Cut up some vegetables. You can chop them into chunks, strips or shave them on a cheese grater. It’s up to you how you do it. Vegetable ideas are cabbage, celery, onion, carrots. I also add chopped cloves of garlic. Mix them all in a large plastic bowl. Have a glass jar with wide mouth. I use quart mason jars. Fill with the veggies, pack them in. Then pour a brine mixture over veggies. To make the brine you use filtered water and add 1-3 T of sea salt per quart of water. I then put a cabbage leaf on top of the veggies and brine. This helps keep them packed in. Loosely put the lid on your jar. As they ferment they will seep fluid.
