I am thankful for a cancer diagnosis. Good morning! Hope your Thanksgiving was a great time to connect with family and friends and recount why you are thankful. I am thankful that on March 9th, 2010 I was diagnosed with Stage 4 Lymphoma. Does it sound strange that I am so thankful for receiving a stage 4 cancer diagnosis? It may, but it’s true. Right from the beginning God worked in my heart to see cancer as a blessing and not a curse. The months following that diagnosis were filled with fears, anxieties but HOPE always won out. His promised always proved true. Here are some of the biggest lessons I learned. 1. Perspective. With only God’s help I was able to see a cancer diagnosis as a way to grow in my faith, allow God to love on me and choose to not complain or say, “why me?” Instead…

Healthy Chicken Stir Fry Ingredients: 2 Chicken Breasts-cubed Mix of green, red, yellow or orange peppers Fresh mushrooms Onion Coconut Oil Sesame Seed Oil(optional) Basmati Rice-cook according to directions on package Directions: Place 1-2 tsp coconut oil in pain, cook cubed chicken until done, set aside, keeping warm Cut up veggies, Saute in pan Add Chicken back to pan and put 1 Tbs Sesame oil in pan (optional) Place Chicken and veggie stir fry over already cooked Basmati Rice Serve Hot! Great heated up the next day too….IF you have left overs!

Italian Chicken Salad Recipe Ingredients: Baby Spinach Chicken Breast Italian dressing Feta Cheese crumbles Black olives Roasted red peppers Onion Cherry tomatoes Avocado Pecans I took some chicken that I cooked the night before in a jar of Roasted red peppers and garlic. Diced it up and placed in bowl with all the other ingredients listed. I only used about 1 T of Italian dressing. This made a great supper and very filling. I went very light on the feta and pecans. It’s delicious and a great way to use leftover chicken! Let me know how you like it or if you did any other variations.

Cultured Vegetable Recipe Cut up some vegetables. You can chop them into chunks, strips or shave them on a cheese grater. It’s up to you how you do it. Vegetable ideas are cabbage, celery, onion, carrots. I also add chopped cloves of garlic. Mix them all in a large plastic bowl.  Have a glass jar with wide mouth. I use quart mason jars. Fill  with the veggies, pack them in. Then pour a brine mixture over veggies. To make the brine you use filtered water and add 1-3 T of sea salt per quart of water.  I then put a cabbage leaf on top of the veggies and brine. This helps keep them packed in.  Loosely put the lid on your jar. As they ferment they will seep fluid. I place the jars on a jelly roll pan and put them in a warm area, like on top of the…

Chicken & Fruit SaladI had the pleasure of being treated by my father in law to a dinner out at The American Table in Warsaw this past weekend. I ordered their Chicken and Fruit Salad. It was amazing. Here is my attempt to duplicate it.Baby SpinachCubed watermelonDried cranberriesRed grapes, halvedWalnuts ( they were candied at the restaurant, I used plain)Feta cheese crumblesGrilled chickenOptional would be a raspberry or basalmic vinaigretteI also asked for a side of avocado slices that I salt and peppered.A glass of iced tea finished off my meal.Let me know how you like it!!
