Orange Dreamcicle Smoothie This is a great refreshing summer time smoothie. Use as a meal replacement or after a hard summer work out to replenish electrolytes and soothe achy muscles. I have 2 versions of this smoothie. A quick on the go option and the second if you have more time and a blender Quick Orange Dreamcicle Smoothie 8 oz coconut almond milk (or milk of your choice) 2 heaping teaspoons of Orange Shaklee Performance 2 scoops Shaklee Vanilla Protein (either 180, Energizing soy or Vitalizing protein) Mix in a shaker cup or mason jar If you have a blender or NutriBullet Add… a 1/2 to whole frozen banana (sliced and put in freezer the night before) This will make smoothie thicker and add some more calories if needed. Roasted Spiced Carrots Ingredients: 2 lbs carrots, cut diagonally into 2 inch pieces 3 T Olive Oil 2 T butter 3-4 T roasted salted pistachios-chopped 1/2 tsp each of salt, ground coriander, black pepper 1/4 tsp each of chili powder, paprika 1/8 tsp each of ground ginger, cinnamon Dash of ground cloves and cayenne pepper Directions: Pre Heat oven to 400 degrees. Coat a jelly roll pan with olive oil Toss Carrots and olive oil in bowl Mix spices together and toss over carrots Arrange and spread out carrots on jelly roll pan Roast in oven for about 40 min. Transfer on to a serving dish. Melt 2 T of butter and drizzle over carrots. Sprinkle chopped pistachios on top. Serve! I took this to a family Easter Dinner about 50 minutes from my house. I made at home then transferred to a preheated crock pot on “keep warm” level…
Healthy Chicken Stir Fry Ingredients: 2 Chicken Breasts-cubed Mix of green, red, yellow or orange peppers Fresh mushrooms Onion Coconut Oil Sesame Seed Oil(optional) Basmati Rice-cook according to directions on package Directions: Place 1-2 tsp coconut oil in pain, cook cubed chicken until done, set aside, keeping warm Cut up veggies, Saute in pan Add Chicken back to pan and put 1 Tbs Sesame oil in pan (optional) Place Chicken and veggie stir fry over already cooked Basmati Rice Serve Hot! Great heated up the next day too….IF you have left overs!
Veggie Eggs Sauté orange peppers, spinach and tomatoes in 1 tsp coconut oil, set aside. Scramble 2 large eggs. Put veggies back in pan to warm up again. Place on plate and put several crumbles of feta cheese on it. Enjoy!

Chicken Rice and Veggie Soup Ingredients: 1 Bone in Chicken breast (or leg quarter) 4 cup chicken broth (I had some frozen from cooking whole chickens in the crock pot for other meals) 1 cup cooked Basmati Rice 2 T. Chicken soup base 1-2 cups filtered water Mixed veggies (I used 3/4 cup of dry vegetable mix from bulk food store and also added diced zucchini and mushrooms) Directions: Cook Chicken in chicken broth in a crock pot on high for 4 hours. Remove chicken and de-bone. Cut up chicken in pieces and put back into crock pot. Add rice, soup base and veggies to crock pot. Add 1 to 2 cups water depending on how rich you want your broth. Cook on low for 1 hour.
