Personal Pizzas

Personal Pizzas  Ingredients: 6 English Muffins ( I used whole wheat) Pizza sauce or Pesto Your preference of toppings i.e. cheese,  cooked ground chicken, turkey sausage, veggies. Directions: Toast English muffins. Then arrange them open faced on a cookie sheet.  Spread either pesto sauce or pizza sauce on each muffin.  Add your choice of toppings and finish off with cheese. Place in oven at 425 degrees until cheese is melted (only takes about 3 or 4 minutes) Serves 4-6 people *NOTE in the pics above I had one muffin topped with pesto, ground chicken, green peppers and mushrooms.  The second one I replaced the pesto with pizza sauce.  These are great for kids to build their own pizza..we have also used pita bread or tortillas as well instead of the English muffins.

Chicken Veggie Rice Soup

Chicken Rice and Veggie Soup Ingredients: 1 Bone in Chicken breast (or leg quarter) 4 cup chicken broth (I had some frozen from cooking whole chickens in the crock pot for other meals) 1 cup cooked Basmati Rice 2 T. Chicken soup base 1-2 cups filtered water Mixed veggies (I used 3/4 cup of dry vegetable mix from bulk food store and also added diced zucchini and mushrooms) Directions: Cook Chicken in chicken broth in a crock pot on high for 4 hours.  Remove chicken and de-bone.  Cut up chicken in pieces and put back into crock pot.  Add rice, soup base and veggies to crock pot. Add 1 to 2 cups water depending on how rich you want your broth. Cook on low for 1 hour.

PEACH INDULGENCE Ingredients: 1 serving of Shaklee 180 Strawberry Smoothee Mix 1 Cup frozen peaches (unsweetened) 1 Cup frozen mangos (unsweetened) 1 Cup water, almond, rice, or coconut milk   Directions: Combine all ingredients in blender and blend on low speed until fruit is blended in.  Roast Chicken, Potatoes and Butternut Squash Ingredients: 2 tablespoons minced garlic, divided 1 teaspoon salt, divided 3/4 teaspoon freshly ground black pepper, divided 1/2 teaspoon dried rubbed sage 1 (3 1/2-pound) roasting chicken Cooking spray 12 ounces red potatoes, cut into wedges 1 1/2 cups cubed peeled butternut squash (about 8 ounces) 2 tablespoons butter, melted Directions: Preheat oven to 400°. Combine 1 1/2 tablespoons garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper, and sage in a small bowl. Remove and discard giblets and neck from chicken. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat. Lift wing tips up and over back; tuck under chicken. Rub garlic mixture under loosened skin. Place chicken, breast side up, on rack of a broiler pan coated with cooking spray. Place rack in broiler pan. I am sharing today a gluten free recipe. I made these for my kids and they loved them! So much so that they took them to school and shared them.  NOW I get special requests. In fact today I just made a second batch for a bunch of baseball players!  So here ya go. Enjoy!   Energizing Protein Bites Ingredients: ½ cup Natural Peanut Butter Creamy (oil on the top..not whipped) 1/3 cup Honey (I used local raw) ¼ c Flax Seeds 1 tsp Vanilla 1 cup Gluten Free Oats ½ cup Shaklee Vanilla Energizing Protein Powder or Shaklee Vanilla Life Shake ¼ cup Mini Chocolate Chips Directions: Mix Peanut butter, honey and vanilla. A friend said she was struggling with losing “the last 10 pounds”. Here is my reply to her..hope it may help anyone else who is struggling with the same problem. Ahhh the last 10’s always the hardest it seems..ok so I will throw some ideas out at you.. I realize you may or may not already be doing some of these but they are what I find most helpful for people. 1. NOOOOOO SODA! Especially NO DIET soda. 2. Avoid artificial sweetners (one reason no diet soda) but also look at things like crystal light etc. they disrupt hormones making it harder to lose weight. 3. Journal/Log EVERYTHING you put in your mouth.. either on paper or on an online site like or– and share it with someone..(accountability partner) (I use a Shaklee 180 app on my iPhone..every time I log I get entered into a prize drawing for free stuff!) 4. How Important Is Accountability? I am currently reading, Made to Crave: Satisfying Your Deepest Desire with God, Not Food, by Lysa Terkeurust.
