I love summer because we eat so many fresh veggies from our garden! It seems like we always have tons of zucchini. In the past I have always made lots of bread with it…since I have gone gluten free this past year I had to come up with other recipes to keep up with my over abundance of this awesome green veggie! I made this Saturday morning for my Weekly Weigh In Group and it was a big hit! I made more for my family and they loved it too! Try it and let me know how you liked it!
Zucchini Pizza Recipe
- Olive Oil
- Salt and Pepper
- Fresh basil leaves
- Pizza sauce OR a thin sliced tomato
- Mozzarella cheese-shredded
- Choice of toppings- like banana peppers, pepperoni, olives, mushrooms
