Zucchini Pizza Recipe

I love summer because we eat so many fresh veggies from our garden! It seems like we always have tons of zucchini. In the past I have always made lots of bread with it…since I have gone gluten free this past year I had to come up with other recipes to keep up with my over abundance of this awesome green veggie!  I made this Saturday morning for my Weekly Weigh In Group and it was a big hit!  I made more for my family and they loved it too! Zucchini Pizza Recipe

Ingredients:
  • Zucchini
  • Olive Oil
  • Salt and Pepper
  • Fresh basil leaves
  • Pizza sauce OR a thin sliced tomato
  • Mozzarella cheese-shredded 
  • Choice of toppings- like banana peppers, pepperoni, olives, mushrooms
Directions:
Preheat oven to 450 degrees.
Place slices of zucchini on a cookie sheet. Drizzle olive oil on each zucchini slice. Sprinkle salt and pepper on each slice. Spoon on pizza sauce or layer a tomato slice. Next place onZucchini Pizzas top a whole basil leaf. Add shredded mozzarella cheese. Top it off with any other additional toppings of your choice. Bake for about 10 minutes until the cheese is starting to slightly brown. Take out and let cool for a few minutes before eating. These are addictive! Enjoy.
